Make Something Monday

Banana Bread

8 Tablespoons (1 stick) unsalted butter
1 1/4 cup sugar
2 large eggs
4 ripe bananas smashed, may use more if needed.
1 teaspoon vanilla extract
4 teaspoons butter milk
2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon salt
1 cup chopped pecans(optional)

Heat over to 350 degrees: Butter and flour a 9x5 inch loaf pan.

In a bowl cream butter and sugar until fluffy. Add eggs, one at a time, beating well after each addition. Add bananas, vanilla, and buttermilk. In separate bowl stif together flour, baking soda, and salt. Gradually add to wet mixture and stir to combine and moisten. Stir in the pecans, if desired. I have used chocolate chips.

Pour batter into pan. Bake for 45-50 minutes or until golden brown. Serve at room temperature.

Note: This batter is enough for 2 (12inch) ring molds.

I can just smell it now. There is something so wonderful about baking banana bread - okay most breads - love it.

I love banana bread! I've never made it with buttermilk though
